Digestive health expert, content creator & advocate at Celiac and the Beast
Erica is a well-known digestive health expert, content creator and advocate at Celiac and the Beast. She’s known for her work covering the trade show floor searching for the best gluten-free products and celiac disease research at national trade shows like Natural Products Expo and Gluten-Free Expos across the country, and in her role as a patient advocate for digestive health conferences like Digestive Disease Week and more.

Andy Hackett
Program and Mission Coordinator at Gilmont Camp
Andy Hackett serves as the Program and Mission Coordinator at Gilmont Camp and Conference Center located in East Texas. His Gilmont journey started when he was just 7 years old and attended his very first overnight summer camp- The Great Gluten Escape. GGE is a summer camp for youth with celiac disease or gluten intolerance. For Andy, this was the first time he ever met another person with Celiac disease, and started his lifelong love of camp. Gilmont is proud to host GGE every year for over 80 youth from across the country. Andy hopes that all young people with Celiac or gluten intolerance are able to have a fun, safe summer camp experience like he had growing up.

Kayla King
Certified Nutrition Coach and Social Media Educator
Kayla King is a certified nutrition coach and social media educator who has been living with celiac disease for over 20 years. She’s worked in restaurants, collaborated directly with chefs to improve allergy protocols, and coached teens on how to eat out more confidently with celiac. Today, she shares practical tips and encouragement online to help others feel confident, empowered, and normal while living with celiac disease.

Kendra Williams
Gluten-Free Content Creator
Kendra was diagnosed with celiac disease in 2017. After getting glutened any time she ate out, she decided the time was right to train a gluten detection service dog. When she got her Portuguese Water Dog puppy, Suki, she started to post their training adventures as a fun pandemic hobby. In the process, she found a community of people who are living gluten-free with celiac disease or other conditions. Professionally, Kendra works with consumer packaged goods companies and retailers to develop strategies and training programs for digital marketing and ecommerce. After hearing many horror stories of people she has brought some of her professional training to help educate people about training a gluten detection dog through Celiac Service Dogs (www.celiacservicedogs.com).
